Our role at the O2 arena comes to down operations, specifically operating a high volume floor bar.

High-volume service is essential to meet the demands of short service windows typical of concert-style events. With over 100 shows each year, we adapt our offerings to match the varying demographics of each concert, ensuring we consistently drive revenue for AEG.

To enhance the speed of service, we have focused on reducing queue times while also increasing the average transaction size. Maintaining consistency among our team in such a fast-paced, challenging bar environment is crucial to our success. To address this, we’ve brought in a core team to manage and operate the high-volume bar, ensuring maximum revenue generation.

In addition, we’ve introduced incentive schemes to keep our staff motivated and excited about working with us on a regular basis. By adjusting both the front and back bar setups to increase meterage, we’ve been able to streamline service, significantly reducing queue times from 15-45 minutes down to just 1-7 minutes.

This approach has resulted in a 75% improvement in revenue, alongside better cost management and increased profitability of the entire operation.
